Looking for a simple, easy, healthy salad to make? This Raw Broccoli Salad is one of  the many salad recipes that I offered in my 21 day gluten free, dairy free challenge.

1 cup of broccoli offers as much vitamin C as an orange, and is a good source of beta-carotene. Broccoli contains vitamins B1, B2, B3, B6, iron, magnesium, potassium, zinc and lots of fibre too.

This salad is easy to make and if you have kids it’s a super easy way to get them to eat veggies. 

Ingredients

  • 3 heads of raw broccoli
  • 1/2 red onion, sliced
  • 1 carrot, thinly sliced
  • 1 apple, diced
  • handful of dried cranberries
  • handful raw sunflower seeds or pepitas
  • 1 avocado
  • 1 clove garlic
  • 1/2 tbsp lemon juice
  • 1/4 tsp sea salt
  • pepper to taste
  • 1/4 cup olive oil or more depending on your desired consistency

Directions

  1. Chop all the ingredients finely and mix with salad dressing ingredients.
