Quinoa Cakes with Salsa
Looking for a tasty lunch or dinner idea? These quinoa cakes with salsa are delicious and super healthy!

Ingredients
- 1 1/2 cups cooked quinoa
- 2 eggs
- 1/2 cup red pepper, chopped
- 1/4 cup sorghum or chickpea flour
- 1/2 cup onion, diced
- 1/3 cup shredded cheese ( for dairy free use Daiya mozzarella shreds)
- 1/3 cup fresh basil, chopped
- 1 tsp sea salt
- olive oil
- salsa- Our family loves Neal Brothers Organic Mild Salsa

Directions
- In a frying pan cook onion, and red pepper in a little olive for a few minutes. You want the onions and peppers to be soft
- In a small bowl whisk the eggs
- In a large bowl mix all ingredients together and let sit for a few minutes
- In a large frying pan add a little olive oil and scoop quinoa mixture into rounds into pan and cook on medium heat
- Turn carefully so to brown on both sided
- Serve with salsa or a side salad

Thanks for your Quinoa Cake recipe! I was just in Jacksonville, FL and went to a food store there called Native Sun and had some really good Quinoa Cakes in their deli area. They were somewhat similar but were baked and were half circle shaped. They have egg and cheese in them but next time I’m subbing in chia and ground flax soaked and possibly daiya cheese. For these you use an ice cream scoop and scoop on to parchment paper and bake. I am going to try your recipe next!
