Ingredients

  • 4-5 peaches, peeled and sliced
  • 1 cup wild blueberries
  • 1/4 tsp vanilla bean powder
  • 1/2 tsp cinnamon
  • 1 tbsp maple syrup
  • 1 tbsp chia gel or 1 tbsp ground chia seed ( to make gel 1/2 cup water + 2 tbsp chia seed let gel in fridge for 1 hour)
  • 1 cup almond flour or hazelnut flour
  • pinch sea salt
  • 1 tbsp coconut oil, butter or palm shortening

Directions

  1. In a bowl mix peaches, blueberries, cinnamon, vanilla, maple syrup and chia seed together.  I prefer using vanilla bean or vanilla bean powder as opposed to vanilla extract. If you don’t have the powder or bean you can use extract.
  2. In a bowl mix nut flour, salt and oil- I make my own almond and hazelnut flour by simply blending the nuts in a high powered blender.
  3. Place fruit in a square baking dish and sprinkle nut mixture on top
  4. Bake 350F for 20 -25 minutes
  5. Remove from oven and serve with coconut ice cream
