Paleo Peach Blueberry Crisp
Ingredients
- 4-5 peaches, peeled and sliced
- 1 cup wild blueberries
- 1/4 tsp vanilla bean powder
- 1/2 tsp cinnamon
- 1 tbsp maple syrup
- 1 tbsp chia gel or 1 tbsp ground chia seed ( to make gel 1/2 cup water + 2 tbsp chia seed let gel in fridge for 1 hour)
- 1 cup almond flour or hazelnut flour
- pinch sea salt
- 1 tbsp coconut oil, butter or palm shortening
Directions
- In a bowl mix peaches, blueberries, cinnamon, vanilla, maple syrup and chia seed together. I prefer using vanilla bean or vanilla bean powder as opposed to vanilla extract. If you don’t have the powder or bean you can use extract.
- In a bowl mix nut flour, salt and oil- I make my own almond and hazelnut flour by simply blending the nuts in a high powered blender.
- Place fruit in a square baking dish and sprinkle nut mixture on top
- Bake 350F for 20 -25 minutes
- Remove from oven and serve with coconut ice cream
