Lentil Rice Salad

This lentil rice salad is perfect for dinner or lunch and features healthy, tasty olive oil and balsamic vinegar from The Unrefined Olive– a super tasting bar in Ottawa where you can try any of their premium extra virgin olive oils and aged balsamic vinegars from around the world.

Ingredients
- 1 cup cooked brown or green lentils
- 1/2 cup cooked white basmati rice
- 1/2 cup tomatoes, diced
- 1/2 cup cucumber, diced
- 4 leaves fresh basil, chopped
- 1/2 cup fresh parsley, chopped
- 2 green onions, chopped
- 2 tbsp cranberry pear white balsamic vinegar from the Unrefined Olive
- 2 tbsp Persian lime olive oil from the Unrefined Olive
- 1 tsp yellow mustard
- 1 tsp maple syrup
- sea salt to taste
Directions
- In a bowl mix lentils, rice, tomatoes, cucumber, basil, parsley and green onions.
- In a small jar mix balsamic vinegar, oil, mustard, maple syrup and salt. Put lid on and shake well.
- Drizzle dressing over salad and mix
