This lentil rice salad is perfect for dinner or lunch and features healthy, tasty olive oil and balsamic vinegar from The Unrefined Olive– a super tasting bar in Ottawa where you can try any of their premium extra virgin olive oils and aged balsamic vinegars from around the world.

Ingredients

  • 1 cup cooked brown or green lentils
  • 1/2 cup cooked white basmati rice
  • 1/2 cup tomatoes, diced
  • 1/2 cup cucumber, diced
  • 4 leaves fresh basil, chopped
  • 1/2 cup fresh parsley, chopped
  • 2 green onions, chopped
  • 2 tbsp cranberry pear white balsamic vinegar from the Unrefined Olive
  • 2 tbsp Persian lime olive oil from the Unrefined Olive
  • 1 tsp yellow mustard
  • 1 tsp maple syrup
  • sea salt to taste

Directions

  1. In a bowl mix lentils, rice, tomatoes, cucumber, basil, parsley and green onions.
  2. In a small jar mix balsamic vinegar, oil, mustard, maple syrup and salt. Put lid on and shake well.
  3. Drizzle dressing over salad and mix
