Lemon Vanilla Macaroons- Gluten and Dairy Free
Who doesn’t love macaroons? These lemon vanilla macaroons are so easy to make.
You can add whatever flavours you like to your macaroon. Some people like to add chocolate or strawberries to their macaroon recipes, but I think you will love this light taste of lemon and vanilla.
In this recipes I have added in some vanilla bean powder, honey and lemon zest. Let me know if you love these lemon vanilla macaroons as much as my husband did.
Ingredients
- 3 large egg whites
- 1/4 cup honey
- pinch sea salt
- 2 1/2 cups of shredded unsweetened coconut
- 1 tsp vanilla bean powder
- zest of a lemon
Directions
- Beat egg whites in a bowl until fluffy
- Add in honey, vanilla and remaining ingredients
- Place spoonful of cookies on a parchment lined cookie sheet
- Bake 325F for 18- 20 minutes or until done
