Lemonsnowballs

Ingredients

  • 1 ½ cup nut flour ( almond or hazelnut)

  • ⅓ cup coconut flour

  • 1 ½ cup unsweetened shredded coconut

  • pinch salt

  • 4 tbsp honey

  • zest of 1 lemon

  • ¼ cup melted coconut oil

  • ¼ cup lemon juice

  • 3 tbsp apple butter

Directions

  1. Mix ingredients together in a bowl. Form into small balls and place on parchment lined cookie sheet. Bake 325F for 10 minutes

    Makes approximately 24 balls

  1. Hi Joan, no apple butter is different than applesauce, it is cooked longer so becomes sweeter and more carmelized, it is a dark colour. you can find it in health food stores, I like the brand Filsinger, Eden, But check the ingredients you do not one with added sugar, just the apples.
