Do you ever look at this beautiful green and purple shapes in the grocery store and wonder what to do with them? Well here is a delicious Kohlrabi Salad Recipe for you to try! Ingredients

  • 1-2 medium kohlrabi, thinly sliced
  • 1/2 orange pepper, thinly sliced
  • 1/2 yellow pepper, thinly sliced
  • 3 small carrots, thinly sliced
  • 1/4 cup olive oil
  • 1/2 tsp sea salt
  • 1 large garlic clove
  • juice of half lemon
  • 2 tbsp fresh cilantro or parsley

Directions

  1. Slice vegetables and place in a bowl
  2. Mix olive oil, sea salt, garlic, lemon juice  and cilantro in a food processor or blender and pour over vegetables
  3. Toss and serve
