Hazelnut flour pancakes with pear sauce is perfect for breakfast or brunch

Ingredients

  • 1 cup hazelnut flour
  • 1/3 cup potato starch or tapioca starch
  • 1 ripe banana
  • 1 tbsp ground flaxseed
  • 2/3 cup unsweetened Silk cashew milk
  • 3 tbsp melted coconut oil, plus more for cooking
  • 1 tsp baking powder
  • 1 tsp baking soda
  • pinch sea salt
  • fresh blueberries

Directions

  1. Ground hazelnuts to make flour in a Vitamix or high speed blender or food processor.
  2. In food processor mix banana, coconut oil and cashew milk until well combined
  3. Add in remaining ingredients and mix. If batter is too think add in more milk.
  4. Add a bit of coconut oil to a green non stick frying pan(i.e without teflon coating) or a ceramic pan and on medium low heat pour batter into pan. When bubbles appear flip and cook on other side

    My question is :
    Why are you saying to use an nonstick pan when it is well known that they are extremely toxic and dangerous.

    1. Hi Pamela. I use a green healthy non stick pan and a ceramic pan, thanks for pointing that out I will change it in my recipe- what type of pan do you use?
