Gluten Free Pasta Beef Casserole

Ingredients
- 1/2 large onion, diced
- 2 celery stalks, sliced
- 1/2 red or orange pepper, diced
- 3 garlic cloves, minced
- 1 (798ml) tin of tomatoes
- 1 1/4 lb ground beef
- sea salt and pepper to taste
- 1 box (340g) gluten- free Catelli macaroni
- 1 1/2 cup Daiya shredded pepper jack cheese
Directions
- In a large frying pan saute onions and garlic in a little olive oil for a few minutes. Add in peppers and celery and cook for a minute. Add in tomatoes and cook for another few minutes. Add in ground beef and simmer for 20 minutes, until meat is cooked through. Add in 3/4 cup pepper jack cheese and simmer for a few minutes
- In a separate pot cook pasta until done. Rinse and place in a large casserole dish and mix in meat and tomato mixture. Top with remaining pepper jack cheese and bake in oven at 350F for 35- 40 minutes
