Ingredients

  • 3/4 cup gluten-free oats
  • 3/4 cup buckwheat flour
  • 1/2 cup arrowroot starch
  • 3 tsp baking powder
  • 1 1/2 tsp vanilla extract
  • 2 tbsp chia seed mixed in 1/2 cup water ( let sit to gel for at least an hour) ( then add in the whole thing)
  • 1/3 cup unsweetened applesauce
  • 1/2 cup unsweetened coconut milk
  • 1/3 cup melted coconut oil
  • 1/3 cup honey
  • 1 cup strawberries
  • 1 cup raspberries
  • walnuts (optional)

Directions

  1. In a food processor process your oats until they are somewhat fine. Add in the rest of your dry ingredients and pulse.
  2. Add in wet ingredients and mix well.
  3. Add in fruit and just pulse gently so you still have chunks of fruit left- if you want to add in some nuts do so here.
  4. Pour into an 8×8 oiled pan
  5. Bake 350F 40-45 minutes
  6. Top with coconut cream, coconut ice cream or eat as isStrawberry-shortcake_3939
