Gluten Free Berry Cake

Ingredients
- 3/4 cup gluten-free rolled oats
- 3/4 cup buckwheat flour
- 1/2 cup arrowroot starch
- 3 tsp baking powder
- 1 1/2 tsp pure vanilla extract
- 2 tbsp chia seed mixed in 1/2 cup water ( let sit in fridge for an hour to gel- then add all of it to the recipe)
- 1/3 cup unsweetened applesauce
- 1/2 cup unsweetened coconut milk
- 1/3 cup melted coconut oil
- 1/3 cup honey
- 1 cup strawberries
- 1 cup raspberries
- handful walnuts ( optional)
Ingredients
- Make chia gel and put in fridge
- In a food processor process your oats until they are somewhat fine. Add in the rest of the dry ingredients and pulse a few times to mix together
- Add in wet ingredients and mix
- Add in fruit and just pulse gently so you have some chunks of fruit- if you want to add in nuts do so here
- Pour into an 8x8x oiled pan
- Bake 350F for 40-45 minutes
- Top with coconut cream, dairy free ice cream or enjoy a slice on its own
