These muffins are free of gluten, dairy, eggs and nuts so if you have food sensitivities or allergies in your house these may be perfect for you or your family. I created this recipe last night and I have to say these chocolate zucchini muffins are a real winner in our house.

- 1 1/2 cup rolled oats
- 1 tsp baking soda
- 1/2 tsp sea salt
- 1 tsp cinnamon
- 1/2 tsp nutmeg
- 1/4 cup maple syrup or less
- 1/2 cup unsweetened apple sauce
- 1/4 cup melted coconut oil
- 1 tsp apple cider vinegar
- 1 tsp pure vanilla extract
- 1 cup grated zucchini
- 1/2 cup dark chocolate chips
Directions
- Shred zucchini in a food processor until fine
- Add in all other ingredients and mix, add chocolate chips last
- Spoon into muffin tin
- Bake 350 F for 20 minutes

I always look for gluten free recipes but when flour is omitted, oats are used and I also grain free. Are there any other choices for making your wonderful recipes?
