Some of my clients say that they find dates too sweet, so I wanted to create a little energy ball that would satisfy, yet not be overly sweet. I created this recipe for cashew apricot balls and I have to say they are really delicious. Apricots are full of Vitamin A, C and contain potassium, iron, zinc, calcium and manganese. This recipe takes only minutes to make, so on your next trip to the health food store, pick up some cashews and organic dried apricots so you can make these amazing health balls.DSC_0324

Ingredients

  • 2 cups roasted salted cashews
  • 1 1/4 cup dried organic apricots ( organic traditions)
  • 1 tsp cardamon
  • 4-5 tbsp melted coconut oil

Directions

  1. Mix cashews, cardamon and apricots in a food processor.
  2. Add in coconut oil slowly until mixture begins to stick together.
  3. Roll into small balls and store in a sealed container in the fridge
