Artichoke Avocado Salad

Artichoke avocado salad is so easy to make. It contains healthy nutritious foods that will allow you and your family to enjoy this yummy artichoke avocado salad.
Ingredients
- 1 can (398 ml) artichoke hearts in water, drained and sliced
- 1 bunch kale, chopped
- 12 cherry tomatoes, chopped
- 1/2 red pepper, diced
- 1 avocado, chopped
- 3-4 green onions, sliced
- 1/3 cup balsamic vinegar
- 2/3 cup olive oil
- 1 tsp mustard
- 2 garlic cloves, minced
- 1/4 tsp sea salt
- pepper to taste
Directions
- In a bowl, mix together kale, tomatoes, artichokes, peppers and onions.
- In a small bowl, mix vinegar, oil, mustard, garlic, salt and pepper and pour over salad.
