Raw Broccoli Salad

1 cup of broccoli offers as much vitamin C as an orange, and is a good source of beta-carotene. Broccoli contains vitamins B1, B2, B3, B6, iron, magnesium, potassium, zinc and lots of fibre too.
This salad is easy to make and if you have kids it’s a super easy way to get them to eat veggies.
Ingredients
- 3 heads of raw broccoli
- 1/2 red onion, sliced
- 1 carrot, thinly sliced
- 1 apple, diced
- handful of dried cranberries
- handful raw sunflower seeds or pepitas
- 1 avocado
- 1 clove garlic
- 1/2 tbsp lemon juice
- 1/4 tsp sea salt
- pepper to taste
- 1/4 cup olive oil or more depending on your desired consistency
Directions
- Chop all the ingredients finely and mix with salad dressing ingredients.
