Walnut Sun-Dried Tomato Pate
Whether you follow a paleo or vegan diet, this walnut sun-dried tomato pate is easy to make. It’s for a perfect snack or lunch idea. Spread on gluten-free crackers, slices of cucumbers, stuffed into tomatoes or an avocado.
Ingredients
- 1 cup walnuts
- 1/3 cup sun dried tomatoes
- 1/3 cup fresh parsley, chopped
- 1 tbsp olive oil
- juice of 1 lemon
- 5 roasted garlic cloves
- 4 tbsp water from soaked tomatoes
- 1/2 tsp sea salt
Directions
- Soak walnuts in water for few hours
- Soak sun dried tomatoes in water for a few hours
- Roast garlic in oven- to roast garlic put cloves in aluminum foil, drizzle with olive oil and roast 400F for 40 minutes
- Drain walnuts and sun dried tomatoes (keep a bit of the water from tomatoes)
- Add all ingredients to a food processor and blend, if it is a bit dry add some of the saved water to moisten mixture
