Tofu Stir Fry with Ginger
Ingredients
- 1 block firm tofu 454g
- 1 broccoli, cut into florets
- 1 1/2 cup snow peas
- 1 red pepper, sliced
- 10- 12 Brussel sprouts, thinly sliced
- 1/2 large onion, sliced
- 1 1/2 cup bean sprouts
- 1/4 cup tamari
- 1 1/2 tbsp toasted sesame oil
- 2 tsp freshly grated ginger
- 4 cloves garlic, minced
- 1/2 cup water
- 1 tbsp arrowroot powder or corn starch ( optional)
Directions
- Cut tofu into bite sized pieces and put in a bowl
- Mix tamari, sesame oil, ginger, garlic, water and arrowroot together and pour over diced tofu
- Cover and let marinate in the fridge for 5 hours
- In a frying pan with a little olive oil stir fry onion, pepper, broccoli and Brussel sprouts for 5-10minutes. You may need to add a little water so they don’t dry out
- In a separate pan brown tofu. Once brown, add into the veggies with sauce and cook for a few more minutes to let sauce marinate the vegetables
- Add in snow peas and bean sprouts at the end of cooking and cook for a few minutes
