Sweet Potato Breakfast Pudding

Breakfast has always been a difficult meal for me. When I was first diagnosed with multiple food allergies it seemed that every single food I needed to avoid was what I ate for breakfast. I had to avoid wheat, gluten, eggs, dairy, soy, chicken, apples, yeast, tomatoes and pork. No more toast or cereal. Eggs were out, so now what would I eat for breakfast? I tried gluten free toast with nut butter, but it was dry and crumbly. I tried granola with rice milk and it made my stomach upset. Some mornings I just wanted to skip breakfast all together, but if I did that my blood sugar dropped and I got shaky and weak.

As I began to create allergy-free recipes for myself I learned to use alternative ingredients. Sometimes I switched things up a bit and ate leftover dinner for breakfast. Some nights I would cook extra squash or sweet potatoes and in the morning reheat them, add in some cinnamon and top with nuts or seeds.

Last week I had some cooked sweet potatoes in my fridge. I also had a little bit of coconut milk left in the can. I always have nut butters in the fridge so I grabbed my Vitamix and scooped out the sweet potato, added in some nut butter and a little coconut milk and whipped it up. It came out smooth and creamy and I topped it with nuts and voila, I had a delicious, healthy sweet potato breakfast pudding!

  • contains a healthy dose of Vit A, C, B5, B6

Directions

  1. Mix all ingredients except nuts in a food processor or blender until smooth
  2. Put in a bowl, top with raw nuts

  2. You’re right, it does look like the post title is misleading. But I did not put it there for people to find it in the comments. In fact, I would not even remember about it at all. I was more focused on the post text.
    So, unless you all caught the odd thing, correct it. But I think that it’s unlikely that people will read comments (especially yours) and be misled in any way.
