Sunflower Dressing

Ingredients

  • 1 cup roasted sunflower seeds
  • 1 clove garlic, minced
  • 1/2 red pepper, roasted
  • 1/2 tsp sea salt
  • 3/4 cup water
  • juice of 1 lemon

Directions

  1. Roast raw sunflower seeds in a cast- iron pan on low to medium high heat, stir often so they don’t burn
  2. Roast red pepper under broiler, until skins turn black. Cover, cool, then peel off skin
  3. Blend all ingredients together in food processor adding water slowly- you don’t want it too runny
  4. This is a great dressing to pour over avocado or for a dip with raw vegetables

Creamy Cucumber Dressing

Ingredients

  • 1 cup silken tofu
  • 1/4 cup lime juice
  • 1 cucumber, sliced
  • 1/4 cup raw cashews
  • 2 green onions, chopped
  • 3 tbsp fresh dill
  • 1/2 tsp sea salt

Directions

  1. In a food processor, grind cashews until very fine, add all other ingredients and blend until creamycucumber dressing
  2. Refrigerate and serve
  3. This makes quite a thick dressing- I sometimes use it as a dip for vegetables
  4. Try it over sliced zucchini, purple onion and radish

 

Thai Dressing

Ingredients

  • 1/2 cup sesame oil
  • dash toasted sesame oil
  • 2 tbsp fresh mint, chopped
  • 2 tbsp fresh cilantro, chopped
  • 4 tsp grated fresh ginger
  • 3 green onions, choppedgreen onions
  • 1/2 tsp cumin or curry powder
  • salt and pepper to taste

Directions

  1. Mix all ingredients in a food processor
  2. Pour into a dark container and refrigerate
