Peanut Butter Chocolate Chip Cookie Ice Cream Sandwiches- Gluten & Dairy Free
Gluten Free, Dairy Free Peanut Butter Chocolate Chip Cookie Ice Cream Sandwiches

Ingredients
- 1 cup sorghum flour
- 1/2 cup quinoa flour
- 1/2 cup tapioca starch
- 2 tbsp chiaseed in 1/2 cup water – let gel for 30 minutes
- 1 tsp baking powder
- 1/2 cup coconut oil
- 1 cup smooth all natural peanut butter
- 1 tsp pure vanilla extract
- 1/3 cup maple syrup
- 2/3 cup dairy free chocolate chips
Directions
- Mix all ingredients except chocolate chips in a food processor until mixture comes together.
- Add in chocolate chips and pulse a few times to combine
- Scoop out large balls and flatten into cookies on a parchment lined cookie sheet
- Bake 340F for 10-15 minutes
- Let cool
- Take 2 cookies and place a scoop Screamin Brothers frozen mocha treat inbetween
Ingredients
- 2 cups almond flour
- 1/2 cup applesauce
- 1 ripe banana
- 1/4 cup ground flaxseed
- 3/4 cup natural smooth peanut butter or almond butter
- 2 tbsp melted coconut oil
- 1 tsp baking soda
- 1/2 cup dairy free chocolate chips
Directions
- Mix applesauce and banana in a food processor
- Add in all other ingredients except chocolate chips and mix
- Add in chips and pulse
- Scoop large amounts onto parchment lined cookie sheet and flatten
- Bake 340F for 12-15 minutes
- Let cool
- Take 2 cookies and place a scoop of Screamin Brothers Mocha frozen treat in the middle to form a sandwich
