The Night Before Baked Oatmeal
Looking for a fast, healthy breakfast? Why not bake up some oatmeal the night before so it’s ready to go in the morning.
As the weather gets cooler and mornings get busy, it’s important for young and old to start the day with a healthy breakfast.
Adding chia seed, healthy fat like coconut milk will keep you feeling fuller longer and not spike your blood sugar like plain oatmeal will.
Ingredients
- 2 cups Bob’s Red Mill gluten free rolled oats or steel cut oats
- 1 tsp cinnamon
- 1/2 tsp nutmeg
- 3/4 cup unsweetened applesauce or apple butter
- 3/4 cup So Delicious unsweetened coconut milk
- chia gel- to make gel use 2 tbsp chiaseed with 1/2 cup water ( put in fridge to gel for 1 hour)
- 1 tsp vanilla
- 2 tbsp coconut oil
- 1/2 cup walnut pieces ( optional)
Directions
- Mix all ingredients together in a bowl. Place into a 8×8 square baking dish and bake 350F for 15-18 minutes
- Heat in the morning and add extra milk, seeds or nuts to top
