Ingredients

  • 2 cups cooked sweet potato
  • 1 1 /2 cups cooked green or brown lentils
  • 5 cloves of roasted garlic
  • 1 tsp cumin
  • 1 tsp sea salt
  • 1 small green cabbage
  • 1/2 onion
  • 2 bay leaves

Directions

  1. Bake 3 sweet potatoes in the oven 400F for 45 minutes
  2. In a pot cook 1 cup lentils with 4 cups water. Add in half and onion and 2 bay leaves. Bring to a boil then simmer for 35 minutes
  3. Fill a large pot with water and boil whole cabbage for 45 minutes
  4. Place garlic and a little olive oil in a aluminum foil and roast for 45 minutes in the oven along with the sweet potato
  5. Allow sweet potato, lentils and cabbage to cool a bit. Remove bay leaf from lentil pot
  6. Blend 2 cups or sweet potato with 1 1/2 cups cooked lentils, cumin,  and salt in a food processor until smooth
  7. Remove outer layer of cabbage leaves and line the bottom of a square glass dish.
  8. Remove more cabbage leaves and fill with 2-3 tablespoons of sweet potato mixture and roll, then layer them in the glass pan
  9. Bake 325F for about 20 minutes to reheat
  10. Serve with soup and a salad
