Key Lime Pie- Raw & Vegan

Crust
Ingredients
- 1 1/2 cups pecans
- 9- 10 large medjool dates
- 1/4 cup unsweetened shredded coconut
- 2-3 tbsp melted coconut oil
Directions
- Mix ingredients together in a food processor adding coconut oil slowly until mixture comes together.
- Press mixture into a large 10 inch pie plate and set aside
Filling
Ingredients
- 2 1/2 cups raw cashews- soaked overnight
- 1 cup full fat coconut milk
- 3/4 cup lime juice
- 1/2 cup honey
- 1 tsp vanilla powder or vanilla extract
- 1/2 cup melted coconut oil
Directions
- Soak cashews in water overnight, drain and rinse
- Add all ingredients into a food processor and mix until smooth
- Spread mixture into crust and put in fridge for a couple of hours to firm up
Oh boy this pie did not last long in our house- even my neighbour had 2 pieces
