Holiday Baked Apples so delicious and easy to make.

Cold winter nights mean snuggling up by the fire or with a good book- why not have a healthy warm treat to keep you company?

Baked apples bring back fond memories for me. Every fall my Mom would make homemade applesauce,  baked apples or apple pie. The smell of cooked apples would fill the house and make it feel so homey. After dinner we would always look forward to a bowl of warm applesauce with a homemade oatmeal cookie or baked apples topped with brown sugar. This version of baked apples is slightly different as it excludes the brown sugar and uses raisins and honey to sweeten. The tang of the cranberries with the sweetness of the apples is a delight- adding a hint of cinnamon and cardamom makes it special.

Cranberries offer anti- inflammatory and anti-cancer health benefits. They are a great source of Vitamin C, E, K, fibre and manganese.

Apples are full of pectin, a soluble fibre which the body needs. Add in the healthy antioxidants and an apple a day will keep the doctor away. Just make sure you choose organic apples as regular apples are sprayed heavily with pesticides.

Ingredients

  • 4 organic apples
  • 1 tbsp coconut oil
  • 1 tbsp honey
  • 1 cup fresh or frozen cranberries
  • 3/4 cup raisins
  • 1/4 tsp cinnamon
  • 1/4 tsp cardamom
  • zest and juice of 1 small orange
  • handful pecans

Directions

  1. Cut 1/2 inch off the top of apples and set aside
  2. With a spoon or knife core out seeds or apple
  3. In a pot melt coconut oil and honey, and add cranberries, raisins, orange zest, juice, cardamom and cinnamon
  4. Cook over medium for 5 minutes until cranberries break apart, stir often
  5. Place apples in an oven proof dish with a little water in the bottom
  6. Fill apples with cranberry mixture
  7. Place a few nuts on top and put tops back on apples
  8. Cover with foil and bake 400F for 15-20 minutes or until soft
