Say Love With These Heart Healthy Valentine Cookies

Valentines Day is often filled with sugary candies and or chocolates. Why not make up a bunch of these delicious heart, healthy Valentine’s Day cookies so you can share them with your love. Filled with healthy ingredients like flax seed, pumpkin seeds and nut butter, these cookies will fill you up with healthy protein and fat. They will keep you fueled longer with no spike in your blood sugar.

Ingredients

  • 1 cup gluten free rolled oats
  • 1/3 cup ground flax seed
  • 3 tbsp raw pumpkin seeds
  • 3 tbsp raw sunflower seeds
  • 1/3 cup almond butter or sunflower seed butter
  • 1 tsp pure vanilla extract
  • 3 tbsp raw honey
  • 1/4 cup dried apricots or prunes, chopped
  • 1 tsp cinnamon
  • 4 tbsp melted coconut oil

 

Directions

  1. Mix all ingredients in a bowl and mix together with your hands until ingredients come together. ( if you keep your nut butter in the fridge make sure it is room temperature before you make these cookies or it will be hard to mix together)
  2. Form into cookies and place on a parchment lined cookie sheet and bake 340F for 10 minutes
  3. Enjoy these heart healthy Valentine cookies with your loved ones

  1. tried to make the heart healthy valentine cookies…couldnt shape into cookies, too runny…tried adding more oatmeal stick couldnt make cookies….and ideas?

    1. Pat- did you follow the recipe? Did you use rolled oats ( not quick oats) There is very little liquid in this recipe so they can’t be runny-usually they are on the dry side- try again and let me know
