Gluten Free, Grain Free Granola
I love granola either for breakfast or as a snack during the day- let me know what you think of this granola recipe in the comments below
Ingredients
- 1 cup raw hazelnuts
- 1 cup raw pecans
- 1/2 cup flaxseed
- 1/2 cup ground flaxseed
- 2 tbsp chia seed
- 1/2 cup pecan butter or other nut butter
- 3 tbsp honey
- 1/2 tsp pure vanilla bean powder
- 1 tsp cinnamon
- 3-4 tbsp melted coconut oil
- 1/2 cup unsweetened shredded coconut ( optional)
Directions
- In a blender break up the nuts and flax a bit so they are in pieces
- Mix all dry ingredients in a bowl
- Melt honey, pecan butter and coconut oil together on the stove and pour over dry ingredients and mix well
- Place mixture evenly on a parchment lined baking sheet
- Bake 300F for about 30 minutes or until done
