Focaccia Bread- Gluten Free

Are you tired of spending $8.00 on gluten free bread that doesn’t taste like bread? Why not make your own Focaccia bread, its moist, tasty and a great substitute for bread-
Ingredients
- 3 cups almond flour
- 1 cup tapioca flour
- 1/2 large onion, diced
- 3 clove garlic, chopped
- 2 tsp xanthan or guar gum {optional}
- 8 tsp baking powder
- 1 tsp sea salt
- 1/2 cup olive oil plus more for brushing
- 2 cups water
- 3 tsp olive oil for frying onions
- 1/2 cup fresh basil, chopped
Directions
- Fry onions and garlic in a pan with 3 teaspoons of oil, until slightly carmelized
- In a bowl mix almond flour, tapioca, baking powder, basil, onions, olive oil and add water in slowly. You may not need all the water depending on your almond flour. You want your mixture to be goopy, not too thick and not too runny
- On a parchment lined baking sheet spread mixture evenly
- Bake 375F for 35 minutes
- Let cool, cut into slices or squares, store in a glass container in the fridge or freeze

Have you tried it with coconut flour instead of Almond Flour?
What size baking sheet do you use? I was wondering how thin/thick to spread this.
I use the standard size I think its 10×14 baking sheet and I spread it about 1/2 inch thick
I thought that wheat,baking soda and baking powder were to be avoided when going gluten free?
there is no wheat in this recipe and no baking soda and powder are gluten free
I also want to know if coconut flour can be used in place of almond flour, or if substituting coconut flour if more moisture has to be added? My granddaughter is gluten intolerant and has tree nut allergies so we can’t use almond flour or almond milk.
Not sure if coconut flour would work here. I would be more apt to try a gluten free flour blend instead

Coconut flour is gluten free just not sure if it would work well in the foccacia bread recipe. I have never tried it with coconut flour. You would need to add eggs or liquid if you tried is with only coconut flour
you could try Bob’s Red Mill gluten free flour mix as well in addition to adding a little coconut flour if you like
What’s your take on coconut flour for this recipe? It sounds delicious but all I have is coconut flour. I have been told this won’t interfere with hormonal imbalances. Thank you so much for all you do!
I have never tried this recipe using coconut flour- I dont think it would work as it would need more liquid or an egg
I have a severe allergy to tree nuts so I can’t use almond or any tree nut based flour. What other gluten free flour could I substitute the Almond flour with ?
you could try using Bob’s Red Mill gluten free flour mix- I have not tried it with that but I think it will work- you might need more moisture though- not sure
Hi. The bread recipe looks wonderful. But I can’t have almonds . They are high in oxalates which cause inflammation for some people.
Is there another gluten free flour that might work well in this recipe?
I lost faith in finding a GF bread bread recipe that I like or can tolerate so will be giving this one a go. I am not intolerant to almond flour but do react to GF all purpose flours so will stick with your recipe and, hopefully, it will be yet another string to my GF bow. Thanks for sharing, I will post again and let you know how I got on.
Could you tell me if I could use rice flour in this recipe instead of tapioca flour as I dont think I am good with tapioca flour plus I want to replace guar gum, which can cause stomach issues, with gum arabic, which I have read is easier on the stomach.
I have made this several times and love it with soup — or anyuthing! Even my non-GF family like it.

I can’t tell you how often I have made this during quarantine! I am a high risk individual and not having to go to the store for gf bread (which I enjoy making but is much more laborious than this amazing focaccia!) has been wonderful. I have only gone out 10 times since the 16th of March thanks to you! You have now protected me from gluten and Covid -19. I thank you from afar.
