Cazuela For Dinner
A dear friend had surgery this week and another friend just had a bone marrow transplant and I was wondering what I could make them to eat that would be easy to digest, yet comforting. My friend Vivianne is from Chile, and many times she has made a Chilean dish for us called Cazuela. It is delicious and comforting and I thought this is the perfect dish to make for both of them.
Cazuela is like a hearty soup filled with chicken, squash, chicken broth, potatoes and corn. Since I have an allergy to corn I make this dish without the corn.
If you have a slow cooker this a simple meal to make for your family, friends or loved ones who are healing and need some comfort food.

Ingredients
- 6 skinless chicken drumsticks or thighs
- 3 cups butternut squash, peeled and cut into 2- inch cubes
- 6 small potatoes
- 3 large carrots, peeled and cut into 2- inch chunks
- 4 cups chicken broth
- salt and pepper to taste
- 1 tsp thyme
- fresh cilantro, chopped
Directions
- In a slow cooker add all the ingredients except cilantro.
- Cook on high for 3-5 hours
- Spoon into large bowls and top with cilantro
- You can also serve this dish over cooked rice
