Cazuela- Chicken Dish

Cazuela is a popular chicken dish in South America. My best friend is from Chile and she often makes this recipe and I have adapted it for my audience.
This yummy chicken dish will love be loved by family or friends.
This recipe is free of gluten, dairy and is low in histamine for those with mast cell activation syndrome.
Ingredients
- 4 chicken legs with thighs
- 1 small onion, sliced
- 1 organic red or orange pepper, sliced
- Handful of celery leaves (top part of celery)
- ½ cup butternut squash, diced and the other half sliced
- 4 large carrots, peeled,
- 4 potatoes, optional
- Handful fresh cilantro or fresh parsley
- 4 fresh basil leaves
- 1 inch ginger, peeled and grated
- 2 tsp sea salt
- 6 cups water
Directions
- In a high-speed blender put in cut up onion, pepper, celery, ½ cup squash, ginger, cilantro or parsley and basil, salt and water. Blend until combined.
- In a slow cooker place chicken and add liquid. Cook on low and slow all day or on high for 4 hours. One hour before it is done add in slices of squash, carrots and potatoes. Serve in a bowl
