Cauliflower and Broccoli Salad
Ingredients
- 1 head cauliflower, cut into flowerets
- 1 head broccoli, cut into flowerets
- 1 red pepper, diced
- 1 orange pepper, diced
- 1 yellow pepper, diced
- 3 carrots, diced
- handful fresh parsley, chopped
- handful fresh basil, chopped
- 6 tbsp olive oil
- 2 cloves garlic, minced
- 3 tbsp umeboshi vinegar
- juice of 1 lemon
- sea salt to taste
Directions
- Cook broccoli and cauliflower in hot water for 3 minutes
- Drain and rinse in cold water to stop cooking
- Place in a large bowl and add in other vegetables.
- Mix in dressing ingredient and enjoy.
