Cranberry Orange Loaf Gluten Free
This cranberry orange loaf is gluten free and delicious for snacks or to serve at Christmas gatherings
Ingredients
- 2 cups gluten free flour or if you can have gluten use 2 cups spelt flour
- 1/4 cup maple syrup
- 1 1/2 tsp baking powder
- 1/2 tsp baking soda
- 1 tsp sea salt
- 1/2 cup butter or vegan butter
- 1 egg beaten or use flaxseed mixture (2 tbsp ground flaxseed mixed with 6 tbsp water- let sit for 5 min)
- 2 tsp grated orange zest
- 1/2 tsp grated lemon zest
- 3/4 – 1 cup orange juice ( depends on what flour you use) so add the liquid slowly
- 1 cup raisins
- 1 cup fresh cranberries
Directions
- Mix dry ingredients together in a bolw
- Cut in butter or vegan butter
- Add in egg, or flax egg. Add in zest, and juice. Fold in cranberries and raisins
- Pour into greased loaf pan. Bake 350F for 1 hour
