This cranberry orange loaf is gluten free and delicious for snacks or to serve at Christmas gatherings

Ingredients

  • 2 cups gluten free flour or if you can have gluten use 2 cups spelt flour
  • 1/4 cup maple syrup
  • 1 1/2 tsp baking powder
  • 1/2 tsp baking soda
  • 1 tsp sea salt
  • 1/2 cup butter or vegan butter
  • 1 egg beaten or use flaxseed mixture (2 tbsp ground flaxseed mixed with 6 tbsp water- let sit for 5 min)
  • 2 tsp grated orange zest
  • 1/2 tsp grated lemon zest
  • 3/4 – 1 cup orange juice ( depends on what flour you use) so add the liquid slowly
  • 1 cup raisins
  • 1 cup fresh cranberries

Directions

  1. Mix dry ingredients together in a bolw
  2. Cut in butter or vegan butter
  3. Add in egg,  or flax egg. Add in zest, and juice. Fold in cranberries and raisins
  4. Pour into greased loaf pan. Bake 350F for 1 hour
