Green Goddess Salad

Ingredients

  • 1 head broccoli
  • 1 napa cabbage
  • 1 zucchini
  • 1/4 cauliflower
  • 1 bunch mustard greens
  • 1 bunch organic kale
  • 1 bunch Swiss chard
  • 1 bunch arugula
  • 1 bunch watercress

Dressing

Ingredients

  • 1 cup extra-virgin olive oil
  • 2 cloves garlic, minced
  • 1 tsp dry mustard
  • 1/2 cup red wine vinegar
  • 2 strips anchovies
  • 2 tbsp fresh parsley, chopped
  • dash oregano
  • dash basil
  • sea salt

Directions

  1. Chop salad greens into bite-sized pieces and place in a large bowl
  2. Mix dressing ingredients together in a blender or food processor.
  3. Add dressing to salad and serve
